5 Minute Breakfast Sandwich

As busy parents, mornings can turn into a whirlwind very quickly. We often have to make sure everyone gets out of bed on time, gets dressed, has a good breakfast, brushes their teeth, has their school supplies ready and then get everyone out of the door on the way to school and work, only to remember that you yourself forgot to eat breakfast! With this recipe, you can be sure that everyone (yes, even you!) has a hot and delicious breakfast even on the most rushed of mornings.

What Ingredients Do I Need to Make a 5 Minute Breakfast Sandwich?

  • English Muffin
  • 1 Egg per sandwich
  • Sliced Cheese
  • Canadian Bacon (or any other breakfast meat of your choice)

My Favorite items to use for these sandwiches are:

  • Thomas Light Multi-Grain English Muffins-At just 100 calories per muffin these are the perfect “bread” for these sandwiches. I have found that the Thomas brand English Muffins last much longer than other comparable brands
  • Jones Dairy Farm Canadian Bacon-The serving size is 3 slices and has 10 grams of protein per serving. It is 97% fat free which makes it a great choice for a breakfast meat. I personally only use 1 slice of this per breakfast sandwich, but you can add more if desired.
  • Velveeta Slices Original-Each slice only has 35 calories, and it melts so easily in the microwave for this recipe.

What are the Steps to Making 5 Minute Breakfast Sandwiches?

  1. Spray your ramekin or small bowl with non-stick cooking spray. I love using my ramekins for these because the eggs don’t stick to them, and it makes the perfect size egg for my sandwich every time.

2. Add one egg to your ramekin and stir it up thoroughly with a fork.

3. Microwave the egg for about 20 seconds. Check the egg for doneness and add more time as needed. My microwave usually takes about 40 seconds for the egg to be done completely. Egg will be set and will slide out easily. (Be careful as the ramekin might be hot!)

4. Meanwhile, you are going to go ahead and prep the rest of your sandwich. Split the English muffin in two and add your cheese and Canadian bacon to it.

5. Flip over the ramekin onto the bottom portion of the English Muffin to add the egg to it. If your egg is a little runny on the bottom when flipped over, you will want to microwave your sandwich as an open-faced sandwich until your egg is completely set.

6. Put the sandwich together and microwave just until your cheese starts to get melty and your Canadian bacon is warm. Usually, 20-30 seconds is perfect! Enjoy!

Can you freeze these breakfast sandwiches?

Busy parents are always looking for ways to save time in the mornings and I completely understand! However, I have never tried to make these ahead and freeze them. I have made other breakfast sandwiches and frozen them before, so these should be no different. I would just cook the eggs as directed and let cool completely before assembling the sandwiches. Be sure to wrap the sandwiches tightly before putting in the freezer to avoid freezer burn and drying out of the sandwiches.
